pasta with fra diavolo sauce

ingredients
- penne
- 1 15oz can whole tomatoes, hand crushed in a bowl
- red pepper flakes
- garlic, sliced
- 2 fillets anchovies
- olive oil
- shrimp, optional
- pinch cayenne
instructions
- 1 Bring water to a boil in stock pot, add salt and penne. Cook to al dente, about 10 minutes.
- 2 Heat saucepan over medium heat. Add olive oil and red pepper flakes, letting flakes simmer.
- 3 Add anchovy fillets, letting cook until they disintegrate. Lower heat slightly and add sliced garlic, cooking briefly.
- 4 Add crushed tomatoes, salt, pepper, cayenne. Simmer until reduced slightly, adding pasta water as needed.
- 5 Add shrimp (if using) until cooked through, about 3-5 minutes.
- 6 Add cooked penne to sauce, stirring to combine. Serve immediately, topping with extra olive oil.
