pasta with fra diavolo sauce

ingredients

  • penne
  • 1 15oz can whole tomatoes, hand crushed in a bowl
  • red pepper flakes
  • garlic, sliced
  • 2 fillets anchovies
  • olive oil
  • shrimp, optional
  • pinch cayenne

instructions

  1. 1 Bring water to a boil in stock pot, add salt and penne. Cook to al dente, about 10 minutes.
  2. 2 Heat saucepan over medium heat. Add olive oil and red pepper flakes, letting flakes simmer.
  3. 3 Add anchovy fillets, letting cook until they disintegrate. Lower heat slightly and add sliced garlic, cooking briefly.
  4. 4 Add crushed tomatoes, salt, pepper, cayenne. Simmer until reduced slightly, adding pasta water as needed.
  5. 5 Add shrimp (if using) until cooked through, about 3-5 minutes.
  6. 6 Add cooked penne to sauce, stirring to combine. Serve immediately, topping with extra olive oil.
