“White rice” actually covers a wide range of rice varieties, and you’ll want to choose the best one for the dish when possible. For paella, use bomba rice (available at a place like Central Market). For risotto, ideally use carnaroli or more commonly arborio. For Cajun and most other usages, American long-grain is fine.
