  1. 1 Rinse the rice and add it to a pot with water. Bring to a boil, then reduce heat and simmer until water is absorbed.
  2. 2 Add coconut milk, sugar, and cinnamon. Stir well.
  3. 3 Simmer on low heat, stirring occasionally, until the mixture thickens and rice is tender (about 20-25 minutes).
  4. 4 Remove from heat and let sit for a few minutes.
  5. 5 Serve warm or chilled, garnished with extra cinnamon.
