Also known as aubergine in the UK, eggplant is an underrated vegetable. It requires more prep time than other vegetables because we first need to extract water content. Slice to desired cooking shape (e.g. halved lengthwise or sliced rounds), salt generously with kosher salt and rest for about 30 minutes, then remove resulting surface moisture with a paper towel. This step improves texture and seasons the interior for better flavor.
