pisto manchego con huevos
Spanish ratatouille.
ingredients
- 1 15oz can whole tomatoes, hand crushed in a bowl
- olive oil
- 1 eggplant, chopped
- 2 zucchini, chopped
- 2 green bell pepper, chopped
- 3 eggs
instructions
- 1 Heat large stock pot over medium heat. Add olive oil, and saute green bell pepper for 3-5 minutes, stirring occasionally.
- 2 Add zucchini and saute for 3-5 mins, stirring occasionally, then add eggplant, stirring occasionally.
