Greek-style scrambled eggs

  1. 1 Preheat nonstick pan over medium heat. When pan is hot, add olive oil and minced cherry tomatoes, stirring. Cook for 2-3 minutes. Add dried oregano and briefly saute.
  2. 2 Add eggs, season with salt and pepper, and scramble to desired doneness. Serve.
