chili with habanero and sweet potato
ingredients
- 1 15oz can crushed tomatoes
- 2 tbsp tomato paste
- 1 sweet potato, peeled, cubed small
- 1 green bell pepper, chopped
- 2 jalapenos, diced
- 2 habaneros, minced
- 2 cups vegetable stock
- 1 15oz can black beans, drained and rinsed
- chili powder
- cumin
- olive oil
instructions
- 1 Heat large stock pot on medium heat. Add olive oil.
- 2 Saute green bell pepper and jalapeno for 3-5 minutes.
- 3 Add cumin, chili powder, and tomato paste to pot to toast briefly.
- 4 Add vegetable stock and crushed tomatoes and bring to a simmer.
- 5 Add sweet potato, habanero, and black beans and simmer for 30 minutes.
- 6 Taste and adjust seasoning.
