chickpea salad sandwich with arugula
ingredients
- 1 15oz can chickpeas, drained and rinsed
- 2 tbsp Greek yogurt
- 1 tbsp pickle juice
- 1 tbsp dried dill
- 1 tsp Dijon mustard
- bread, sliced & toasted
- arugula, optional
- radishes, sliced, optional
instructions
- 1 Drain and rinse chickpeas, then transfer to a bowl and pat dry with a paper towel.
- 2 Combine the rest of the ingredients except bread. Mash together. If possible, refrigerate at least 30 mins.
- 3 Lightly toast bread, assemble sandwiches, top with arugula.
