  1. 1 Drain and rinse chickpeas, then transfer to a bowl and pat dry with a paper towel.
  2. 2 Combine the rest of the ingredients except bread. Mash together. If possible, refrigerate at least 30 mins.
  3. 3 Lightly toast bread, assemble sandwiches, top with arugula.
